Cattail roots are extremely starchy and can be used to make Alcohol Fuel. They also are used to filter sewage water and do a very good job of it.

I once read that during WWII they used them to fabricate air filters for Navy ships. Also, there is a way to process them for flour. I've just not taken the time to try to harvest some and try them. Been dreaming about it, on and off, for over 20 years :)

One thing we did do, some years ago, was to harvest the cattail pollen and use it half and half with wheat flour. It made wonderful yellow pancakes and good bread. I understand that the pollen is high protein.

zone 6b, rocky clay, slightly acidic soil, summers here are HOT, average first frost Oct 18, last average frost April 15. Temps here fluctuate wildly in the spring, fall and winter.
