I am sure it makes a difference whether they were well developed on the vine or not. For us winter squash eating (other than finishing off immature fruit) starts around Christmas/NewYear's time. This means a minimum of 6 weeks storage and for most several months. Last ones are usually eaten in May.

Okay thanks all. Last time I grew squash they didn't taste all that great, but I didn't wait months until I ate them, so I'll try to be more patient this time and see if flavor improves.
