I agree thinning helps. The local rabbits often do some of this work for me. Otherwise, I thin for salad or use a hard rake if I haven't had time and make space.

Also, those big Mache were not thinned. I didn't do any work in the late fall last year due to poor health for awhile. Here is how my daughter thins mache. She ignores my pleas not to step all over it. Notice how some seedlings are close and other larger because, for whatever reason, they were given more space.

The corn salad must be a different variety clearly. Mine are very much smaller. Large Italian - ok Google brought up Bavicchi seed company selling a very large variety. I guess that may be what you have.
