What about sourdough starter as an acidic medium? Is starter even acidic? Mine has only flour and water...
If I use sprouted grains to make bread... well... just how would that work?

No prob! Yea, I cook Mexican, but mostly veg & cheese things. I buy tortillas. I OCCASIONALLY make my own flour tortillas, but typically I just make them same as I make our communion bread, flour, salt, olive oil, and warm water. I'm gonna have to read this over a few times because it doesn't work in my brain. "I dun unnerstan you Lucy."
