Does anyone know how long it takes Yacon to mature seeds? I have two different varieties flowering at the same time for the first time, so I'm hoping to get some seed, but I'm wondering if there is enough time left. We usually get a hard frost in late November.
I wonder if carefully harvesting the plant, removing the large storage tubers, and then replanting the rest of the root ball in a container would keep it going long enough to mature the seed indoors...

It looks like a couple of flowers that formed before the second variety bloomed have actually set seeds. Clearly I don't know enough about Yacon reproduction.
