could you not breed the "larger-easier-to-grow-but-bitter" one with the "smaller-tasty-but-hard-to-grow" one with each other and reselect for a hardy but tasty variety?

One must not fail to recognize the "this is generally awful, but I know how to use it" thing; there is a certain cachet to knowing how to use things that are worthless to those not of the "enlightened".
