this year my seedlings are strong enough to harvest some nopales. How do you get rid off the glochids before cooking? Can imagine a single one in the dish and nobody in my family will ever eat it again...

Pass them over a burner on the stove or shave them off with a knife.

The other cactus I grow for food is of unknown species. It produces great tasting fruits. There are two seed grown plants.  This might be Opuntia tortispina. www.opuntiads.com/opuntia-tortispina/

That second one looks pretty much Joseph Lofthouse, how long does it take to get one that size from seed? reed my seed grown are about to flower for the first time. I got the seeds from Joseph in 2013.
