This is something new I did just today. I used almonds and orange peel. This is the time of year I try to candy a lot of orange peel. I'd love some feed back if you try it, especially any variations you use.
2 c. nuts, toast 10 minutes at 325 ½ c. candied citrus peel ½ c. water 1/3 c. honey 1/3 c. white sugar 1/3 c. brown sugar 1 t. ground cardamom 1 t. ground cinnamon
Start nuts toasting.
Put water, honey, white sugar, and brown sugar into a medium saucepan over medium heat. DO NOT STIR. Cook until soft crack stage, approximately 10 to 12 minutes from the time it begins to simmer.
Add nuts, peel, and spices. Stir until well coated. Turn off heat and continue to stir until sugar begins to harden, about 5 minutes.
Pour mass onto cookie sheet. Use forks or spoons to separate into smaller chunks. As soon as the nuts are cool enough to touch, break chunks into individual pieces of peel and nuts.
8, 75 gram servings or 16, 34 gram servings.
