I made a zucchini cross this year and don't know how to tell when the result will have ripe seeds.
I just pollinated one flower, so do not have a sacrificial zucchini. I'll just have one chance.

If it is a green zucchini it will usually be fine to leave them on the plant until you notice them starting to break color and turn yellow/orange, usually it will be on upper surface of the fruit wherever it gets the most sun.
Then harvest it and wait approximately three weeks. That gives the fruit enough time to after-ripen the seeds some more. There is no benefit to keeping them much longer than that although they will hold for a month or so past the three weeks. After that point you will start to get the seeds germinating inside the fruit, at least in my experience.
You don't need to wait untill the zuke turns completely yellow, as long as the squash is mature when you harvest it, just give it the three weeks and crack the seeds out.
