Has the Honey Nut already been backcrossed to the moschata side? It is listed on the originating website as a moschata x maxima cross. If it has, and the male fertility restored, it would make things so much easier.

Yes, its been fully backcrossed to moschata, and is alwas listed as a moschata in the catalogs. There are very few interspecies squash hybrid crosses that reliably produce enough viable seed to make them economically feasible to sell as F1 hybrids. Tetsukabuto F1 is the easiest of these to acquire in the US.

...I have all the seeds now and am wondering about growing the Honey Nut and the Musquee de Provence in pots over the winter inside. I have plenty of grow lights and it would enable me to get the first cross out of the way during the winter... I have done winter crosses with tomatoes to get F1 seeds to sow in spring. I usually only get a couple of fruit but that's enough to provide quite a few F1 seeds. Good luck with your project Ecophreek.
