I made Pepper Vinegar this afternoon. Just one jar to try it.
But aside from slicing the rest of the hot peppers (my fingers are still numb) and putting them in the freezer, I couldn't seem to find anything that used a basket of hot peppers all at once?
Any suggestions?

Any chance you could dry them? Then you could just hang the whole thing up.

Naw, the Hinkelhatz have very short stems and weren't braiding friendly. Be-sides, I still have Big Jim's and Garden Salsa's hanging since 2006? 5?? Oh who am I trying to kid. They've probably been there since 1998 A little searching brought up this site. www.pepperfool.com/recipes/canned_idx.htmlIt has a Pepper Relish that uses all hot peppers or half hot, half not. That's Eggxactly the type of recipes I was looking for!

Maybe seed them, cook them in vinegar and run through a food mill...make a spicy sauce?

I did several things with my bumper crop a couple fo years ago. I pressure canned a bunch, made hot pepper vodka with others, froze a bunch, and put the rest in the dehydrator.
I figured that pretty much covered all the bases. It also keeps me enjoying peppers one way or the other all year round.

Do pepper lose heat when they are frozen or do they gain heat from being dehydrator.

DOWN, Its been my experience that they do gain heat when dehydrated. IMHO, they would lose SOME heat with freezing, because since capsacum(sp) is oil based, when the peppers thaw, some of the oil would mix with the water (from the thawing peppers) float in the water and be lost. But I know next to nothing about freezing stuff, and even less about peppers, but I DID stay at a Holiday Inn Express last night,

Whatever spices you use in freezing cooked food, you loose some. I suspect it would be the same by freezing the spices themselves.
