One of the most used parts of training a tree into a home in a pot is to trim the top of it. This is most often done all in a group a couple weeks after repotting. either the end (dominant) bud is removed or a secondary bud is selected and the heartiest removed. Then a few days-weeks later all the leaves are snipped off. This causes secondary buds to form with secondary branches, and smaller leaves.
Pines and spruce cannot have ALL their needles removed so bud ends are reduced in size instead.
Inasmuch as what I do most resembles herbivore grazing. it is not damaging to trees. But does help refine and enhance the illusion that this is a tiny minature of a much older tree.
