Has anyone tried chicory root as a vegetable?

No, but I love it roasted in coffee. I wonder what it tastes like fresh.

No, but I wished I knew how to completely eliminate some wild chicory.

No, but I wished I knew how to completely eliminate some wild chicory. If you cut it down every year before it reseeds it should take about 10-15 years to die out.

I grew an edible rooted chicory the last two years, but somehow failed both years. These were received from a trader as Cicoria di Chiavari. You can find this on some Italian sites as Radici di Chiavari (I'm assuming it's the same thing). It's apparently a speciality of the Liguria region of Italy and is called scorzonere or scorzamara locally (I guess because it's used in the same way as Scorzonera hispanica?). It apparently has sweet tasting roots.
There are also special selections grown for coffee - tried one of those many yearsago...
