Tomorrow I'll be slaughtering a Heritage bronze tom for us, a bourban red hen for Kim's family, and my single broad breasted bronze for our Christmas.
Good times and it will be nice to finally see if the heritage turkeys live up to their reputations!

The turkeys were amazing! Just incredible.
Slaughtering them was a breeze, it took a second to figure out just exactly how to eviscerate them, but much easier and quicker than I had figured.
The bourbon red hen was cooked in a traditional oven at Kims house and was absolutely delectable now quite tasting like any other poultry I had ever tasted and blowing anything found in the local stores out of the water.
The Bronze Tom was deep fried. The most fine grained, beautiful and moist meat I had ever had. The dark meat had a flavor all it's own hard to describe in any real detail.
IF you ever have access to any of these heritage breeds please indulge yourself, you will appreciate the suggestion I can promise you that!
