Anybody feel fall in the air? Smell it approaching? It makes me want to eat winter food already. Today I made a pot of beans (15 types), and threw in a handful of barley, an onion, 6 jalapenos, and an Opalka tomato. Then I made some cornbread muffins. I'm enjoying it right now. Almost makes it worth saying goodbye to another summer.

Funny you should mention this, Johno. Andre is making slow cooked short ribs tonight, and the plan is I will make black bean chili tomorrow. What's your favorite cornbread recipe? I'm a real fan of the kind baked in an iron skillet. However, we have not yet purchased a wall oven unit for the new house, so all baking is done in a countertop convection oven, or a bread machine.
I also enjoy chili served over polenta.
Despite the 100 degree weather this week, we are ready to stop eating salads and cool meals. My seasonal clock says "it's time to start thinking fall". My climate says "nice try, punk... check again in November or so".
Oh well...

Supper sound delicious, but I'm not ready for fall yet. Even if Mother Nature is starting to gently prod us in that direction.

I'm not quite ready to let go either, Grungy. Just starting to feel the change.
I really like the Jiffy cornbread mix. I used a countertop convection oven, too. I am a polenta eating fool, just never thought about putting chili on it. Good idea!

Cast iron skillet all the way here! Sometimes in thick cakes baked in the oven, sometimes I make a really thin batter and make small, cracker like cakes on the stove top. Perfect with veg/beef soup!
Hey Johno! I figured you should be southern enough to eat grits instead of polenta! ;o)

I am a polenta eating fool, just never thought about putting chili on it. Good idea! Lemme tell ya... chili, stew, pulled pork BBQ... all are great served over polenta!
I have also been known to serve a killer roasted winter veggie melange over grits, MnJ... my Yankee blood did NOT rise up and rebel. It was GOOD!

HEHEHE! Food over politics huh Lav!!!! ;o) One of these days I'm gonna have to taste polenta cause from what I've heard it's exactly like grits. What say you?

I say Polenta has a more corn-y" taste, and grits are better for breakfast. I also say I like them both. I like polenta with savory things, and I LOVE grits with maple syrup... toldya I was a Yankee!

EWWWWWW O=O ::shudders at the mere thought of sweet grits:: You sure are a Yankee! ::laughing:: On the other hand, what about tamale pie? What would be better? About 30 years ago Hormel made tamale pie in a can. OMG! The stuff was delicious. Never have been able to reproduce that flavor. I'm not keen on tinned foods, but that and Dinty Moore beef stew are .... wow....

Hey Johno! I figured you should be southern enough to eat grits instead of polenta! ;o) Those corn crackers sound really good - I'll have to try that. I like to spread the batter for 6 muffins into about ten, so they come out like cookies. I find grits to be so bland that they're hardly worth eating. But they are okay with sorghum. I'm Italian enough that I much prefer polenta. But I eat more cornbread by far than either grits or polenta. Tamale anything is awesome! I've been known to drive to Dallas (8 hours one way from here) to buy enough "real" fresh tamales for the extended family - a cooler full. My wife's family are Texans and they like to eat tamales for Christmas. Speaking of cool weather tastes... I made oatmeal this morning with a chopped Granny Smith apple and a healthy dose of cinnamon, sweetened with a little maple syrup. Great way to start a cold morning.

My aunt taught me the trick. She made her batter with self-rising cornmeal and water. I like to add either bacon grease or olive oil. With grits, I adore sharp cheddar cheese or ketchup if I'm eating them with fish. Grits with fried fish is definitely from my mother! My dad is a Spaniard and believes corn and corn products are pig food! He likes his corn second hand! =oP
::sigh:: ah for decent ethnic food of ANY sort! Tonight I'm making chilies relleno and and chicken something. Haven't decided on burritos or nachos or what. But I've made the broth and the chicken is sauteing with garlic, onions, cumin, paprika, and ripened bell peppers. Smells DIVINE!
