I love fried food. Tonight we had a "sorta" tempura. HUGE shrimp literally fresh off the boat. (Love to the guys down at L T Everett and Sons in Sneads Ferry) With onion rings, carrot and pepper strips. I keep a bowl of prepped peppers in the fridge. We've gotten some GREAT peppers. First time ever really. But I wanted to pass the batter recipe on cause it was really great particularly on the poblano peppers.
3/4 c. corn starch 1/2 c. potato starch 3 eggs 1/3 c. water 2 T. Old Bay Seasoning
Mix and refrigerate at least 30 minutes before using. This makes a lot of "drips" in the oil, but even those are wonderfully crunchy and munchy!

Yummy that sounds great! I may have to try it.. I use Bay Seasoning in lots of stuff, chicken, pork you name it. Have you ever deep fried pickle spears? Or Green onions? Both come out yummy, We don't deep fry much anymore but usually once a year or so we go hog wild and almost anything in the fridge is game to go in the dip and dredge and right into the fryer! A personal favorite is lightly steamed and cooled broccoli with a chunk of cheese pressed in it and then dipped and fried. Or take your mac and cheese when it is warm and put it in the small muffin tins until cool/cold- they get quite hard and stay together well and that gets dipped and fried as well, we figured that since it is a once a year type deal we just eat what we want! ;D Oh and we make a few different types of sauces too, ranch, 1000 island (home made of course) the catchup horseradish cocktail sauce. Honey mustard and tartar sauce if we have any fish in the mix.
