Hi all, a friend over at IDig has lost a her copy of Carla Emery's "Encyclopedia of Country Living" and the newer editions do not have the same recipes in it.

I did look at my local library but it was a newer copy too and didn't have the same recipe for cottage cheese pancakes as the older ones. I think she said that her copy was older than the 9th edition that I looked in. Both of the recipes look great and I would love it if some one on here might have them and would share them with me so I can share them back with Eccentric Follies. thanks in advance EM

here's the pancake one...
Cottage Cheese Pancakes
Combine 4 beaten eggs, cup of sour cream or yogurt, one cup of cottage cheese, i cup flour, a dash of salt, and i teaspoon of sugar or honey. Fry on medium hot griddle, same as any pancakes. You can thin it down and add fruit, or add vanilla to make it cakier tasting. i have her book and it's very used but readable. tell ef to PM me if she needs any other recipes!
