My nearest Seedy Saturday is being held on February 20th in Sault Ste Marie, Ontario. It is a full drive event and very worth the long drive.
I'm toying with the notion of organising one here thru the local hort society. Most of the members here are older retired farmers and interested more in their flower gardens than the vegetables but thats okay.
My motivation is to possibly find more local and adapted plant seeds for this part of the world. Does anyone have any tips on what I should offer as part of my local day of seediness?

Obviously, whatever you have a lot of... ;D
If you are looking for rare/unusual, I often find that it is a good idea to have some less common items in your swap list or be prepared to do something like two or three to one of a common item. Some common/stand by items are good...because people may not want to have to go buy the 'regulars'.
Offer stuff you know does well in your area...things you've grown and saved seed from that are known to work for you.

UhOh, I worded that badly... I meant what else should I offer as part of the activities for a Seedy Saturday. I was planning a cold/ hot process compost, bokashi and vermiculture basics display. I also have a neighbour with a CSA who wants a table. I've got a good stash of stuff, but I'm weak on ideas.

Those all sound like good ideas...but the easier composting displays would probably be a container composting demo. I mean, yeah you can have some kind of photo display or presentation type display for the other methods, but it would be hard to set up a hands on type thing, where as with a container/tumbler you put mostly finished stuff in it and add some more throughout the day and the folks there tumble it around.
Container growing demo, especially if you've got access to some kind of self watering containers...mix your own potting mix...grafting demo, if you are planning this early enough, layering/rooting cuttings if later in the spring...

I guess if they are retired farmers then not all of these will be interesting but:
Garlic Self sufficiency with recipes Wild Edibles Season Extension basics Dye Plants and how to use them Wildcrafting of some sort Permaculture topics Using Gray water (depends on the policies in your area) Pruning and grafting Everlastings (flowers) and craft ideas
That sort of thing...
I would see what speakers are close to you and enlist them on their favourite subject
Can I come, sounds fun!

Forgot the most obvious one: Seed saving 101 - open pollinated versus hybrid, self pollinating versus insect/wind pollinated, purity, populations etc... The nitty gritty of these is surprisingly unknown by lots of people/farmers included.
