Please forgive a complete corn growing novice, this question. I understand what an open pollenated corn looks like, how are the other types different?

open pollinated means that it grows true to type, not like a hybrid corn. it you are wanting to save the seeds from a corn and are not making a hybrid for the reasons of plant breeding, then you likely want an open pollinated one.
