Salut Jack... My friend Alan grows them as a fall-winter crop in the Nice area. The problem with carrots in calcareous soil is often iron deficiency, especially if the climate is arid, which is kind of possible in southern France Water well and use foliar feeding ( spraying) of compost tea or kelp extract, it should be OK with most of them. You could also amend the soil with pine needles or oak leaves, wich are plentiful in southern France.
