Somebody knows it variety of potato “BALLYDOOM” I think that it is an Irish variety

Ballydoon may be hard to find. Certainly near impossible here in the USA but in France you may have a chance. Northern Ireland had this one about 3 years ago but it looks like the certified production was being phased out even then.
The last grower I could find in Ireland was
But he had only 0.300 of an hectare. No basic seed was produced and it appears it is being slowly dropped.
I would suggest the parent line of Ballydoon ....British Queen as a substitute. If you want some TPS of descendants of Ballydoon, British Queen or Herold..I have those several generations out to over 10 generations out with my own breeding.
