I have a bunch of awesome sweet potatoes making slips like crazy, and theyre still firm. I know "Irish" potatoes shouldnt be eaten after sprouting, but is there anything known about eating a firm "used" sweet potato?

I've eaten sprouted potatoes before. I was desperate though. Didn't have any ill effects from it... or is that why I'm looney now?

I've eaten sprouted potatoes before. I was desperate though. Didn't have any ill effects from it... I routinely eat sprouted potatoes: without being desperate or anything. To my family the only thing a sprout on a potato means is that it's getting to be spring and we aught to eat more potatoes. As long as they are kept in the dark they are fine. In any case the potato poison that arises when the tubers are exposed to light is deactivated by cooking. The tuber turns green, and it tastes horrid so there is no mistaking which potatoes have been exposed to light.

Sweet potato leaves and vine tips are widely used as food.

Try setting it outside in the same container that you started it in. Do nothing more than keep the water level up. There may be a few short vines next fall and then bring it in for the winter. Believe it or not, I got 3 pickings off a tuber last year and did just that. Got 2 more pickings off it this spring and it is still mostly intact although it has shrunken to about half its original thickness. Last two slips were left on since I already had enough. After those are taken off, I'll retire it to the compost tumbler.

Plants can be so amazing. I just don't understand how mankind can so easily take them for granted.

thanks all, and yeah Joseph, I should have differentiated put out in the sun to sprout... I think ill try eating the "store potato" and keeping like Martin suggests the neato new varieties i got from a friend.

I've never done it but some will save a slip or two just to keep in water as a houseplant. In fact, someone sent me a special container and decorative hanger affair to place a slip in and hang in a window.

i do something similar, i use a big sweet potatoes to detach some slips and after this i grow it as ouseplant...it is nice and decorative, moms like it and wen i explain to non gardening people that is a food plant..
