We've been having some deer roam around the property at night and though I haven't seen any damage yet, I'm concerned for our overwintering favas (about 9 inches so far). Does anybody know or have experience with deer's preference for them? Accounts on the Internet seem pretty mixed.

I would be very concerned. Don't suppose you could SSS them? Probably not.
Another thing that works but is a pain to set up is to get one of those cable dog ties where your dog is tied to a trolley on a cable strung between two posts. Deer are much more afraid of a dog that can move around vs one that is tied in one spot.
If they haven't got into the favas yet you could put up a strand of electric fence and peanut butter bait, but if they've already found them that won't work.
How severe is the deer population in your area?

They're pretty thick. We'll see 5 in a field next to our house on a regular basis, and they'll come right into our front yard on some nights. We live in the middle of nowhere, so no one will care if pick one off. Will probably have to. That's the problem I always run into with overwintering gardens: everything wants to munch on the sole green patch, and my idiot dog is too stupid to keep the boogers away. XP

Fabas are used as feed, they are good tasting and nutritious ... I would be very worried.
