I'm reading a book by Steve Sando about heirloom beans and how different they all taste.
I grew several kinds of dry beans this year, and am thinking of using them for bean sprouts. I wonder if the bean sprouts from different varieties will have distinctive tastes.
Have any of you experimented with this?

Sounds like you're dealing with P vulgaris; I've not tried those. I'm growing several other species, that I have to try, given that they're too small not to try for sprouts.
