There are a few scattered around town and they are dropping their cones. I read that boiling the seeds makes husking them easier. It doesn't, at least not for me. Any tips on how to process this wild bounty?

I decided to do a bit more research on these and discovered that I didn't have Monkey Puzzle nuts but Bunya nuts. Same genus, different species (Araucaria bidwillii), and different methods for getting at the seed!

Yumm !! They make quite a delicious pesto if you have some basil on hand. Boil the nuts for around 15 or 20 minutes and then they can be cut out of there husks,( best cut with a pair of secateurs ) They should not be starchy at this point, but sweet with a resinous pine flavour. Let them cool, blend with some Australian olive oil, lemon or finger lime, perhaps a little chilli and of course the basil.

Found a youtube video demonstrating how to process them by boiling. I'll give that a go. I tried roasting them but the starch in them sets hard like rock which makes for difficult eating!
