My Purple Congo potatoes are never purple all the way through, in fact apart from some marbling in various amounts they have mostly white flesh. What is the problem? Could it be my alkaline soil?

Have you chopped open the seed potatoes you planted to see if they were totally purple?

Yes, they were fully purple when I got them.

Likely missing something in your soil. You might try acidifying the soil a bit next time you grow them or you might consider getting a variety with more intense purple coloring like Azul Toro or Purple Majesty.

Has it been really hot? I believe Tom Wagner has mentioned pigmentation is somewhat temperature dependant.

It doesn't matter what time of the year, hot or cold. I believe it has something to do with my growing conditions so I will plant them in another block with different soil when I dig them next month. Thanks for your input everyone.

I have some spuds, grown from seed, that were mostly solid purple, almost black. A few were marbled. Happy to send you some to try Rowan.
