I planted it some time ago after reading that it had edible shoots, it was of interest to the Land Institute and it was darn attractive. Also, it's supposed to have edible rhizome/tubers but I haven't investigated it. Would love to hear people's edible experiences with this plant. It grows beautifully here and, I like it for naturalizing purposes. Also supposed to be good forage.

In a local Nigerian restaurant, my dad found steamed sunflower heads in his dish. He never found them again, however, but it suggests another edible portion of the plant. I have no reason to believe they were Helianthus maximiliani, but I expect that the species would work in this role.

Were these the unopened buds or the immature heads with seeds? Interesting.
