Any ideas about what it would do out-of-season on the Pacific coast? I'm not thinking about winter, but perhaps early spring.

I grow Canario beans just like any other... They get planted a week after the end of our spring frosts. They get irrigated once a week for about 10 weeks. Then they are allowed to dry in the field for a few weeks before harvest.
