What's the best way to store edible yacon tubers? I want fairly long storage and sweet taste.
I usually store them with the squash and sweet potatoes ( warm). A few days in the sun, and yes, they are sweet but loose a lot of weight and don't store that long.
What's the best way to do it? Cool and humid?

I store yacon this way: Harvest after first frost kills the top. Dig, was and dry for a day. Then in foodgrade plastic bags, top of bag folded down, to close, but not completely airtight. Then store at just below comfortable roomtemperature. I have a small larder, not very cold, just a little colder than the rest of the house, but no sudden sun warming. They store very long time. Forgot three roots last summer, and two of them was still fine in november, when new harvest was dug up.

Interesting. I've stored in pretty much this way and can confirm that it works but one of mine decided to sprout darn it. Too warm?
